Mr. Gavina has a vast background in food service environments, both front and back of the house, as well as in all aspects of hospitality management; as F&B Director and Hospitality professional with over 25 years of International experience, he supervised, managed, owned and opened 20+ restaurants in 9 cities around the world. In recent years, his extensive experience in running multi-units operations positioned him as ideal Project Manager / F&B Director to preopening large luxury establishments in Hong Kong (Marco Polo Hotels - Wharf, Classified and Epicurean Groups), Mongolia (Monnis International) and Vietnam (Vingroup) as well as entertainment centers, lodging facilities and online food catering platforms.

Prior moving to Asia and building his reputation in Bali, Singapore and Hong Kong, he worked 10 years for 3 Internationally recognized groups in United States, including Bice International on 5th Avenue and Da Silvano in the West Village, New York, both rated among the best restaurants in the City and consistently the celebrities' favorite choice. He managed, pre-opened, co-owned and administered restaurants and bars; in addition he pre-opened luxury establishments for large private and public companies.

His professional International background shows a proven track record of excellence in implementing productivity and cost improvements, enhancing the guest experience, analyzing the cost-effectiveness of programs, implementing staff training programs and finally in bringing new creative ideas to food & beverage operations. He has been recognized throughout his career for food quality and service excellence. Restaurants he managed or launched won International awards and had been recognized with high rating in major dining guides, including 7 times in the prestigious Michelin and Tatler Dining Guides. His commitment and desire to provide the ultimate customer experience is marked through his training skills, giving to each property he touches a competitive edge and distinctive unique selling points; his expertise also includes decor refurbishment, equipment sourcing & purchasing, kitchen renovation and new design construction.

Mr. Gavina holds Diplomas in Hospitality Management and in Bar Management; he graduated twice in Media & Communication and Sports & Education Training Methodology at the University of Bologna. Married and with a 7 years old child, he is fluent in Italian, English, Spanish and Indonesian.
